beef stock pasta

Beef stock 300 -500 g beef 3 -4 tbsp oil Salt 1-2 tsp pepper powder 1 medium onion 3-4 curry leaves 1 tbsp grated carrots (optional) Heat the oil in a heavy bottom vessel. Now add the onion and curry leaves.  Add other all ingredients and stir well. Add 3-4 cups of water. Add enough salt and cook covered till the beef is softened. Remove frome the heat.  Ingredients for pasta 200 g pasta 1 large onion 1 large tomato 1 large green chilly 2 small green chilly 2 garlic cloves ( grated) 4 -5 curry leaves( chopped) Chopped coriander 1-2 tsp red chilly powder 3 tsp crushed red chilly 1/2 tsp pepper powder Salt to taste Directions Take a large pan. Ingredients   300g beef 1 large onion  2 -3 green chillies( sliced) 1 small tomato 1/4 tsp mustard seeds 1/4 tsp cumin seeds Salt to taste Water 1/4 tsp cumin powder 1/2 tsp lemon juice Spice mixture  5-6 garlic pods Small ginger piece  2 cloves 2 cardamom 4-5 curry leaves Crush or grind them together.Keep aside. Curd mixture  2-3 tbsp curd 4-5 tsp red chilly powder 2-3 tsp coriander powder 1/2 tsp pepper powder Mix well into a smooth paste. Heat 5-6 tbsp oil in a pan. Add cumin and mustard seed and allow it to splutter. Now add the onion and a pinch of salt. Leave it to fried until golden. Now Add the spice mixture , tomatoes, green chilling and some curry leaves Stir well.add salt. Cook covered till the tomatoes lose their stiffness. Stir well  the spices till well combined. Aloo /keema patatha( potato/keema flat bread)

For this you have to make a rotti dough. You can make chapathi  dough. You can use plain flour instead of atta for make a plain flour dough. Dough ingredients  2 cups of (atta) wheat flour/ plain flour 2 tbsp oil. Salt to taste. Warm water. Direction Knead into a soft dough. Let it rest for  1 hr. Make a potato filling or keema filling to your taste. And follow the steps . finally apply some butter on top (optional) serve hot.

Toasted butter naan sandwitch (without yeast)

Ingredients For the naan 1 cup of plain flour 1/2 tsp baking powder A pinch of baking soda Salt to taste 1/2 tsp sugar 1/4 cup yogurt/curd 1/4 cup warm milk Butter and coriander leaves for garnishing. Direction  Mix the dry ingredients in a bawl. Make a well and add remaining ingredients. Mix and knead well until combined  Sprinkle some additional flour and make smooth dough. Should be little sticky. Now place it on a greased bawl . Cover and leave it to rest for 2 -3 hrs in a warm place. Garlic flat bread

Ingredients  250 - 300 g flour 1 tbsp instant dry yeast 1 tbsp sugar 1/2 tsp salt- to taste Warm water Grated garlic  Oil Direction  Mix flour, sugar, yeast and salt in a bawl. Add warm water and make a sticky smooth dough. Leave it to 30- 45 mints in a warm place. Divide onto 4-5 balls. Roll each into thin circles. ( not too thin) Now brush some oil on top of the dough. Sprinkle some grated garlic. Simply roll it using a rolling pin to stick. Now turn the other side and brush some water . Heat a pan & Place the water greased side on it. Cook over medium high flame . Once it begun to puff up turn the other side. Cooke quickly till the puffed points become black and take it out. Serve hot .

Chicken fried rice

Ingredients Basmati rice ( 500 g , boiled ) Chopped vegetables    1. Spring onion ( 3 )  2. Carrots ( 1 medium)  3. Beens ( 3 )  4. Onion ( 2 medium)  5. Green chilies ( 4 sliced)  6. Curry leaves ( 5 ) 3 -4 eggs 2 tsp pepper powder ( to taste) Salt to taste  1/2 tsp crushed red chilly ( optional) Prefer amount of Fried chicken/ beef ( sliced into small pieces) Direction Heat oil in a vessel.  Add eggs and little salt. Stir and fry. Now add onions .stir and cook. Once the onion started to change its color, add green chilies and curry levels. Now leave until the onions become golden in color. Add all vegetables ,spices and salt. cook over high flam till vegetables are done. ( 1-2 mints , stir continuously. ) Turn off the heat. Now add the vegetables and chicken/ beef pieces to the rice and mix well.  garnish with coriander and serve with hot chilly paste.
