Toasted butter naan sandwitch (without yeast)

Ingredients For the naan 1 cup of plain flour 1/2 tsp baking powder A pinch of baking soda Salt to taste 1/2 tsp sugar 1/4 cup yogurt/curd 1/4 cup warm milk Butter and coriander leaves for garnishing. Direction  Mix the dry ingredients in a bawl. Make a well and add remaining ingredients. Mix and knead well until combined  Sprinkle some additional flour and make smooth dough. Should be little sticky. Now place it on a greased bawl . Cover and leave it to rest for 2 -3 hrs in a warm place. Filling 1 large onion ( chopped) Chopped carrots and spring onion 1 -2 large potatoes (mashed)  Salt to taste 1/2-1 tsp pepper powder  ( or to taste) Pinch of crushed red chilly  Chopped coriander  Oil Direction   Add 2 -3 tbsp to a pan. Heat it. Add onion and salt. Stir fry until it turns into a light brown color. Now add carrots, spring onion and coriander . Stir well. Keep covered for a while. luqaimat ( arabian dumplings)

INGREDIENTS For the batter All Purpose Flour       - 2 cups Warm milk                 - 1 1/2-2 cups curd / yogurt               - 2 tbsp Instant dry yeast         - 2 tsp Corn Flour                  - 2 tbsp Salt                             - 1/2 tsp Oil For syrup: Sugar                           - 1 cup Water                           - 1/2 cup DIRECTION Syrup : Boil water and sugar over low flame until 1 thread consistency. Let it cool For batter : Mix the flour, corn flour and salt in a bawl. Add the yogurt and yeast. Mix well. Now make a thick batter adding the milk. The batter will be thicker than pancake mixture. Now let it rest for 30-45 mints. Heat oil in a pan or a thava. Drop small amount of the batter to the oil using a spoon. Fry them until golden and place them on a paper towel. Allow it to cool slightly. Now pour the syrup over the fried dumplings. Serve warm. 

Garlic flat bread

Ingredients  250 - 300 g flour 1 tbsp instant dry yeast 1 tbsp sugar 1/2 tsp salt- to taste Warm water Grated garlic  Oil Direction  Mix flour, sugar, yeast and salt in a bawl. Add warm water and make a sticky smooth dough. Leave it to 30- 45 mints in a warm place. Divide onto 4-5 balls. Roll each into thin circles. ( not too thin) Now brush some oil on top of the dough. Sprinkle some grated garlic. Simply roll it using a rolling pin to stick. Now turn the other side and brush some water . Heat a pan & Place the water greased side on it. Cook over medium high flame . Once it begun to puff up turn the other side. Cooke quickly till the puffed points become black and take it out. Serve hot .

Chicken fried rice

Ingredients Basmati rice ( 500 g , boiled ) Chopped vegetables    1. Spring onion ( 3 )  2. Carrots ( 1 medium)  3. Beens ( 3 )  4. Onion ( 2 medium)  5. Green chilies ( 4 sliced)  6. Curry leaves ( 5 ) 3 -4 eggs 2 tsp pepper powder ( to taste) Salt to taste  1/2 tsp crushed red chilly ( optional) Prefer amount of Fried chicken/ beef ( sliced into small pieces) Direction Heat oil in a vessel.  Add eggs and little salt. Stir and fry. Now add onions .stir and cook. Once the onion started to change its color, add green chilies and curry levels. Now leave until the onions become golden in color. Add all vegetables ,spices and salt. cook over high flam till vegetables are done. ( 1-2 mints , stir continuously. ) Turn off the heat. Now add the vegetables and chicken/ beef pieces to the rice and mix well.  garnish with coriander and serve with hot chilly paste.

Fried Aduku rotti ( layered rotti)

This is an awesome sri lankan recipe. It's made  with pancake sandwiches with keema filling and covered with a crispy rottie. You can bake this or fry. So let's get started. Ingredients Pancakes 200g plain flour 1 egg ( optional) 1/2 tsp salt 1/8 tsp or a pinch of turmeric powder Water Mix all together and add water. Make a batter ( thosa batter consistency). Pour the batter on a heated pan . Make thin pancakes and set aside.( can make around 10) Outer cover dough  200 g flour 25-30 g butter Salt Cold water Knead everything and make a smooth dough. Let it rest and make your keema. keema 500 g beef ( minced meat) 1/2 cup oil 1 large onion 1 large tomato 1 green chillies 2 tsp ginger garlic paste Chopped coriander 2-3 tsp red chilly powder 1/2 tsp pepper powder 2-3 tbsp curd / yogurt 1 tsp garam masal ( optional ) 1/2 cup grated carrots 1 tbsp grated capsicum (optional) salt keema prep.. Heat oil in a pan. Add ginger garlic
