How to make Watlappam (srilankan traditional dessert )

Watlappam is a famous srilankan dessert, no festival without watlappam for srilankan muslims. It’s a tasty dessert made with eggs & jaggery ,adding lots of cardamoms to the flavor. Out put of Combination of these 3 ingredients is incredible. I just love it.


INGREDIENTS
  • 10 large eggs
  • 360g good quality jaggery 
  • A pinch of salt
  • Palm full if cardamom 
  • 1/2 cup if thick coconut milk ( optional)
Step :1

Crush the cardamoms & Break the jaggery to small pieces,



Add this two ingredients to a large pan & heat it. Heat until well melts,




 add some water & stir well to make the caramel, leave it to cool.
( after cooled if it turns hard again , just add some warm water & stir well , or heat a little to melt it . Don’t heat too much, it must be light warm or cool down before adding to the egg. )

Step :2







Beat the eggs very well using a blender or a beater for about 4 minutes . 
Add the caramel to the beaten eggs , Mix it with the eggs very well,


Check the sweetness wether it’s enough for you, if not add some sugar & mix it. 
If you think the mixture doesn’t get a good color, make some sugar caramels & mix with it. 
Optionally you csn add 1/2 cup of thick coconut milk. It gives a nice texture, if u don’t like just skip it. 



Drain the mixture to a clean large bawl or small bawls, get the foams through the stainer   as much as possible.

Foams make your watlappam soft & fluffy ,get drained everything except the cardamoms. 

 place the bawls on a large pot which contains water to the 1/2 level of the bawls hight. 
Close the pot & steam for about 30mints .  

Insert a knife or a long bbq stick , if it comes out clean the watlappam is ready. Set a side to cool down, serve to the dessert cups & enjoy.
You can refrigerate for more than a week,
