Fried Aduku rotti ( layered rotti)



This is an awesome sri lankan recipe.
It's made  with pancake sandwiches with keema filling and covered with a crispy rottie.
You can bake this or fry. So let's get started.

Ingredients

Pancakes

  1. 200g plain flour
  2. 1 egg ( optional)
  3. 1/2 tsp salt
  4. 1/8 tsp or a pinch of turmeric powder
  5. Water
  • Mix all together and add water. Make a batter ( thosa batter consistency).
  • Pour the batter on a heated pan .
  • Make thin pancakes and set aside.( can make around 10)

Outer cover dough 

  1. 200 g flour
  2. 25-30 g butter
  3. Salt
  4. Cold water
  • Knead everything and make a smooth dough. Let it rest and make your keema.

keema

  • 500 g beef ( minced meat)
  • 1/2 cup oil
  • 1 large onion
  • 1 large tomato
  • 1 green chillies
  • 2 tsp ginger garlic paste
  • Chopped coriander
  • 2-3 tsp red chilly powder
  • 1/2 tsp pepper powder
  • 2-3 tbsp curd / yogurt
  • 1 tsp garam masal ( optional )
  • 1/2 cup grated carrots
  • 1 tbsp grated capsicum (optional)
  • salt
keema prep..
  • Heat oil in a pan.
  • Add ginger garlic paste and onion.
  • Let it fry until golden.
  • Now add salt, carrots, beef and powder spices.
  • Stir and cook until the meat changes its color.
  • Add tomatoes, green chilies and capsicum .
  • Cooke covered until the tomatoes lose their stiffness.
  • Now add yogurt and coriander.Mix well.
  • Cook covered until the minced meat is done.
  • Now on high heat simmer the meat and turn of the stove.

Direction to make the layered rotti 

  • Now roll the cover dough into a thin large circle.
  • Keep a pancake on the center.
  • Now spread some keema on the pancake.
  • And again pancake and keema... Continue process until  5-6 layers or as much as you prefer.
  • Now simply join the edges of the dough to cover the sandwich completely.
  • Or take 1/2 cup of oil on a pot and fry both sides over low flame.
