How to make dates bar

It’s an incredible sweet that you can eat nonstop.... soft & tasty cookie dough up & down .. dates in the middle. Absolutely awesome. Makings your eid table more attractive & giving a extra happiness to your every occasions. Try this recipe if you have never tried it before.... trust me you gonna love it.

Before i start the recipe, I would like to explain the trick of making dates filling.

As we all know, there are many kinds of dates, dried, soft, fresh, hard & some with sugar, some with honey.. etc.

Since it soft to touch no matter what kind of dates it is.. you can just heat it up with a tsp of rose water in a pan till you get a paste, & mix some cashews. Easy right?? 🙃

WHAT ABOUT THE HARD DRIES DATES???🤔

Don’t worry, here the trick .

I used to make the filling with hard dried dates. It was super hard to chew & also to remove the seeds.

But i followed this way to make it easier.
Here are the ingredients we need for it.

 INGREDIENTS FOR THE DATES FILLING
  • 200g of dates
  • Palm full of chopped cashes
  • A tsp of rose water
  • A tsp butter
  • 2 tbsp water
  • 1/2 tbsp sugar
Remove the seeds & wash the dates, add into a cooking pot. Add sugar, butter & the rose water.

Heat it up & start mashing it with a spatula , after few minutes add the water. Mix it well.

Cook over medium low flame while mashing the dates. After a while you will see the dates get softened.

The add the cashews & stir well. Keep cooking till it turns like a dough which doesn’t stick to the bottom of the pan.

It’s done.. let it cool & let’s see how to make the dough.

INGREDIENTS FOR THE DOUGH

  • 250g flour
  • 125g softened butter
  • 60-80 g sugar
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 tsp baking powder
Beat the butter & sugar for about 2-3 minutes., the add the egg. Beat it well until nice & creamy.
Add in the vanilla & salt, beat well.

Now stop beating & stir in the flour in batches  & mix with a spatula. Add the baking powder.
Knead it to a soft dough using your hands.

Divide it into two equals.

Now the fun part. Rolling the dough 😁

Get 2 parchment papers or plastic bags to roll it. Otherwise it will stick to the surface.
You have to roll the each part to the same size , around 4-5 inch squares. Not too thin, not too thick.

Place your dough in the center of your plastic bag or what Ever you use😑
Fold the edges to a square shape like this.

This way of folding will give your the neat & smooth edges.
Now tap the dough with a rolling pin & roll it evenly & this is the result

Now the final process.
Place one of the dough carefully to the greased baking pan.
Spread the dates filling evenly. Don’t press harder. Handle it carefully , otherwise you will end up with a mess.

Top with the other layer. Press it slightly.
Brush with a beaten egg to get the golden shiny top.
Draw some lines with a knife for easy cut.

Bake it on 200degrees for about 30 minutes or until it turns golden.
Cut the squares as soon you take out from the oven.

Let it cool . Place your squares on a serving plate & decorate your table.
