Seeni sambol bun - a soft small bun filled with sweet onion fry, it’s a very famous food in srilanka. Here I’m sharing the recipe for all my fans after a very long period. Try this recipe, share your comments, stay turned.





DOUGH INGREDIENTS
  1. 250g flour
  2. 1 -1/2 tbsp instant dry yeast 
  3. 1 -1/2 tbsp sugar
  4. 1 tsp salt
  5. 25-30 grams of butter( in room temperature)
  6. 1 egg
  7. 3 tbsp milk
  8. 100-80 ml Warm water
Start mixing the dry ingredients in bawl, now add the egg & the milk in the middle.
Mix it with your hands. Now slowly add the water & mix  the dough , it’s sticky but don’t worry.
Transfer the dough to a clean floured surface. 
Add 1/2 of the butter to it & start kneeding for few minutes, then add the remaining & keep kneeding till you get a smooth soft dough. When The dough sticks to ur hands just dust your palms with flour & keep kneeding. Don’t add additional flour to the dough. It will make your dough hard. 

Once you done, cover the dough with a plastic wrap or a clean towel, leave it to double in size.

* if you are living in a cold weather , pre heat your oven on 180 degrees of Celsius for 5-10 minutes, switch it off, place your dough inside the oven, your dough will raise soon.

LET’S MAKE THE FILLINGS NOW,

Filling
  1. 3 large onions
  2. 1 pc of cinnamon stick
  3. 2-3 sliced green chilly 
  4. Curry leaves
  5. 2-3 tbsp chilly flakes/ crushed red chilly 
  6. 1 tsp pepper powder 
  7. 1/2 tsp curry/ coriander powder ( optional) 

  8. Salt to taste 
  9. 1-2 tbsp sugar
Add 3-4  tbsp of oil on a pan, heat it.
Add the cinnamon stick, onion, green chilly & the curry leaves, add salt & sauté for few minutes till the onions turn pink. 
Now add the powder spices & cook until cooked, you will see the onions turning to light brown, now add the sugar, mix it well. Cooke covered for few minutes till well cooked.
 Adjust the spices  according to ur taste.    

Okay , now the filling is done. 😊

Now take out the dough & give it a punch👊transfer to your table top, divide it to 5-6 portions. Make  smooth balls out of each portion , line it on your surface & keep covered, we are going to use one by one.

Now pre heat your oven on 180 degrees of Celsius for 10 minutes.

Meanwhile, 
Roll  the dough into a thin square, place some fillings, Fold the edges & seal it. Place it on your greased baking try upside down z
Continue the same process with the remaining balls.

Brush the buns with a beaten egg, ( you can mix some sugar in it to get more darker)

Bake the buns for about 15-20 minutes or till it turns golden brown.

Take out the buns & brush with butter immediately, it gives you a beautiful shine & make your buns really soft.




Let it cool & enjoy.

Note : sprinkle some roasted sesame seeds on top to make it more eye catching.
